Strawberry Cheesecake Shooters

Ingredients:

  • 1 cup graham cracker crumbs

  • 4 tablespoons unsalted butter, melted

  • 1/4 cup granulated sugar

  • 8 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy cream

  • 1 cup diced strawberries

  • Whipped cream

  • (for garnish) Fresh strawberries (for garnish)

Instructions: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.

Stir until the mixture is well combined and resembles wet sand.

In a separate mixing bowl, beat the cream cheese with an electric mixer until smooth.  Add the powdered sugar and vanilla extract, and continue to beat until light and fluffy.

In a separate mixing bowl, beat the heavy cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

To assemble the shooters, spoon a layer of graham cracker crust into the bottom of each glass. Top with a layer of diced strawberries, followed by a layer of the cream cheese mixture. Repeat the layers until the glasses are full, ending with a layer of the cream cheese mixture.

Cover the shooters with plastic wrap and chill in the refrigerator for at least 2 hours or until set. Before serving, garnish each shooter with a dollop of whipped cream and a fresh strawberry.
