Combine the first 7 ingredients into a bowl
refrigerate for 20-30 minutes
cut cucumber into 1 1/2" slices (do not peel), scoop out with a melon baller part of the cucumber.
chop up the avocados
Get a nice size platting dish, put the leaves of the endives and the 8 chips on the plating dish.
Remove the refrigerated bowl of ingredients and add the avocados and mix.
Dish the bowl ingredients onto the endive and fill the cucumber bowls. Their should be left over amount of the mix, place that into a small dish and place onto the serving platter.
Sprinkle sesame seeds over the top.
